Dennys Food and Recipes: Summer Food: Blueberry Yum Yum Cake Says It All

Dennys Food and Recipes: Summer Food: Blueberry Yum Yum Cake Says It All: From Denny:  This sheet pan cake of creamy goodness only requires two cups of fresh blueberries.  First you make a simple syrup of water and sugar, add cornstarch to thicken, then add the blueberries.  Set the blueberry topping aside to cool while you create the crust.

The crust is a yummy combination of finely chopped pecans, butter and flour that you pat into the sheet pan and bake for about 10 to 20 minutes to make your tasty crust.  Set aside to cool.

To make your filling you combine the cream cheese and powdered sugar together and when that is well combined you add in the whipped topping, pouring it into the cooled crust.

After the blueberry topping has cooled then pour over the cream cheese-powdered sugar-whipping topping mixture.  Now set the sheet pan of blueberry goodness into the fridge to chill well.  Serve to screams of total delight!...

Dennys Food and Recipes: Summer Food: Blueberry Lemonade To Beat The Heat

Advocate staff photo by HEATHER MCCLELLAND -- Grandma's Blueberry Lemonade

                                     The Advocate photo: HEATHER MCCLELLAND

Dennys Food and Recipes: Summer Food: Blueberry Lemonade To Beat The Heat: From Denny:  Blue food.  It's pretty to look at and cooling in this summer heat.  Blueberries are the very essence of summer.  Did you know the silvery bloom on blueberries is a naturally protective waxy coating?

Most people don't wash them until just when ready to eat.  Well, that doesn't work in our house so I pour a large bowl of water, add about 2 Tablespoons of white vinegar and let the entire plastic box and blueberries soak for about 5 minutes to kill bacteria.  Drain the entire box well, dry off a bit with a towel and throw back into the fridge.  Usually, a reputable grocery store - and even from the farm - they give the berries a quick vinegar wash to brush off leaves and bugs.

We all like to dine on blueberries by the handfuls as snacks, toss them on to the breakfast cereal or yogurt and make breakfast muffins. Here's a new twist: how about blueberries in your homemade lemonade?

This interesting recipe (from our local newspaper food writer) combines two fruit syrups:  a blueberry syrup and a lemon syrup.  You only use the blueberry syrup to color the lemonade to your preference.  The remaining blueberry syrup can be used on pancakes, waffles, toast or even in salad dressings.  OK, you got me, this lemonade is so doggone pretty!  Great idea for summer entertaining...

Comfort Food From Louisiana: Chef Recipe: Grilled Cheese Sandwich with Crawfish, Pepper Jack and Shrimp-Tomato Bisque Soup: April Is National Grilled Cheese Month

Photo provided by Loews Hotels -- April is grilled cheese month, the perfect time to make Cafe Adelaide's take on Louisiana Crawfish-Pepper Jack Grilled Cheese With Smoked Tomato-Shrimp Bisque and Pickled Charred Chile Salad.

Comfort Food From Louisiana: Chef Recipe: Grilled Cheese Sandwich with Crawfish, Pepper Jack and Shrimp-Tomato Bisque Soup: April Is National Grilled Cheese Month: From Denny:  Now this is an exotic version of the humble comfort food:  the American grilled cheese sandwich.

You have no idea how hard it was when visiting Austria a few years ago when I attempted to explain how to make a simple grilled cheese sandwich to a local chef.  It was a seriously foreign concept to them.  They didn't have a clue.  Lots of delicious local cheeses yet no Austrian version of a grilled cheese sandwich!  Imagine that.

This Louisiana version comes from executive chef Carl Schaubhut of Café Adelaide in New Orleans.  Of course, as seafood, this rich sandwich is considered Lenten season friendly.  Serve by pairing it with the shrimp-tomato bisque soup. Here in Louisiana we always look for an excuse to enjoy our bountiful seafood so why not go meat free on Fridays even when it isn't Lent?  (You know, that special time that arrives after Mardi Gras and before Easter.)  Our restaurants enjoy creating Lenten season menus, always topping themselves from the year previous!...

Holiday Candy: Peppermint Crunch Bark

Recipe photo
Photo: King Arthur Flour

From Denny:  Looking for a holiday food gift idea?  Any kind of chocolate bark is fun and easy to make - and definitely much appreciated by your friends and family!  Have you noticed how the grocery stores have started stocking all the ingredients for holiday baking - and many at good prices?

Making holiday food gifts gives you an opportunity to grow your baking and cooking skills.  It's also more fun than chasing around the shopping malls - or online - looking for the best last minute holiday deals to save a few dollars.  The higher stress level is just not worth that dog and pony show.

This holiday recipe features both white and dark chocolate layers, a bright red and very festive looking candy cane crunch along with that refreshing peppermint flavor. You might be tempted not to give this candy away as gifts! :)

If you don't enjoy the peppermint flavor or candy canes try your favorite candy flavor in place of the peppermint candy canes.  You could use less of the candy canes and mix it with another candy you enjoy that would complement the peppermint flavor.  Or you could use a favorite nut.  In our house there are always options for experimentation to hit on a new twist of a favorite recipe!  Take a little time and experiment on part of the bark as you lay it out to see what your house enjoys the best.

Ingredients available in ounces and grams too if you live outside of the U. S. Of course, the King Arthur Flour site sells several of the products in the ingredient list - links included if you cannot find another version of the products in your area and you would like to purchase online.

(FYI - I don't have any affiliation with King Arthur Flour - just enjoy many of their recipes. And, yes, the ads are from my Denny Lyon Gifts store at Cafe Press.  Be sure to check both the Denny Lyon Gifts store and the front page of Cafe Press for flash sales and discounts.  Proceeds go to the Greater Baton Rouge Food Bank and St. Jude's Hospital to benefit military families, military veterans and civilians too.)

Dennys Food and Recipes: Thanksgiving: Layered Pumpkin Cheesecake

Photo provided by Betty Crocker -- Layered Pumpkin Cheesecake will be a welcome treat any time during the holidays.

Dennys Food and Recipes: Thanksgiving: Layered Pumpkin Cheesecake: From Denny:  This is the perfect holiday table dessert!  It's so showy it's sure to impress.  Three layers of tasty goodness are the gingersnap cookie crust as it's sturdy foundation to hold the spiced pumpkin cheese layer that is marbled with a vanilla layer.

Like most big cheesecakes, this one should be baked in a springform pan, where the cake cools in the pan for several hours before you remove the sides of the pan.  If you have never used a springform pan, it's so easy it will make you laugh, definitely nothing to be intimidated about at all.

Like any tasty cheesecake, this one is rich in calories too, so a small serving would be welcomed by most.  At a dinner party I like to cut a normal to small sized slice, placing it on one plate and then encourage couples to share so people don't have to feel guilty about busting their diet plan.  After all, the whole point of entertaining is for people to enjoy their tasty treats!...

Photo: King Arthur Flour

Romancing The Chocolate: Double Chocolate Zucchini Bread: From Denny:  Summer time and the zucchini are multiplying like rabbits in our gardens!  Zucchini bread is always welcome just plain but how about "gilding the lily"?  Add some cocoa, chocolate chips and espresso powder to put it over the top.

Quick breads like this recipe are always welcome for the holidays or when you want something special - but not complicated or too demanding of your time and effort.  Like most quick breads this one is an easy recipe to make.  While this delicious bread bakes just sit down, relax and tour through your favorite collected old cookbooks or breeze through some interesting online recipe databases.  Works for me!

Dennys Food and Recipes: Summer Slow Cooker: Strawberry Shortcake

Advocate staff photo by PATRICK DENNIS -- Have a red, white and blue treat with Slow Cooker Strawberry Shortcake.
Photo/Patrick Dennis @ The Advocate
Dennys Food and Recipes: Summer Slow Cooker: Strawberry Shortcake: From Denny:  Summer heat.  Bring on the berries!  If you enjoy fresh strawberries and blueberries - along with a side dish of easy to make dessert - then this recipe is for you.  Our local food columnist is a master at kid friendly recipes, quick recipes and less effort recipes for the working or busy parent.

So, when the summer heat gets you tired, think: what can the slow cooker do for me so I don't have to stand over the stove?

Julie Kay recommends this slow cooker recipe is best if you are home to make sure it does not over cook. In fact, it's one of those desserts that can be cooking while you serve dinner.  If you have any extra fresh blueberries in the fridge then feel free to add them after the shortcake has cooked.  This pretty dessert would be perfect for the Fourth of July holiday celebration too.

Photo: Family Features

Dennys Food and Recipes: Summer Recipe: Cool Fake Watermelon Cheesecake: From Denny:  This is such a fun colorful cheesecake to make that is sure to impress for any special holiday or occasion!  While it looks like watermelon it's really a strawberry flavored cheesecake supported by a delicious coconut and pistachio crumble crust that imitates the watermelon rind.  How clever is that?  And you know it sure tastes better than the rind. :) To imitate the look of the watermelon seeds you garnish the cheesecake with mini chocolate chips.

The beauty of this cheesecake is that you don't have to bake it.  Everything is done on the stove top and then chilled.  Well, I'm sold; ready to start cooking?  ...

Dennys Food and Recipes: Turkey Cooking Tips: How Good Is Your Holiday Roast Turkey?

U.S. President Barack Obama pardons "Popcorn" with his daughters Sasha and Malia at the White House, Nov. 27, 2013.
Dennys Food and Recipes: Turkey Cooking Tips: How Good Is Your Holiday Roast Turkey?:
From Denny:  Roasted my Thanksgiving turkey a day early.  Sure beats stressing on the Big Day.  Also, my husband, affectionately known as "Satan" misses out on trying to micro-manage the cooking, driving me absolutely crazy.  He never did learn to cook but thinks he knows how to tell you all about how to do it anyway.  Getting the Big Bird done a day early is a win-win for everyone as he was less stressed just as much as me!

Though he did try only twice this season to be ever so irritating:  once, when taste testing the fabulous gravy he made The Yuck! Face but could not keep his composure for long, laughed, and then raved about it as one of the best yet.  Later he decided he just had to tell me how to cut the French bread for sandwiches his way rather than the normal slices I was doing for hot garlic bread, his favorite.  Since I'm basically The Spatial Engineer in this house (just ask me to pack a car for travel and I am The Expert on finding every nook and cranny to fill) I explained to him how his way made no sense but cut a few slices for him anyway.  He was so disappointed to realize I was right after all.  "Satan" lost that round.  Never a dull moment at our house, that's for sure!

Hey, we should all be challenging the White House chef to a Roast Turkey Cook Off.  Bet mine is one of  The Best!  We love spices at our house and every year I create something different.  This year's wet rub spices were swimming in clarified butter:  sea salt, black pepper, garlic powder, smokey paprika, cumin, curry powder, marjoram leaves, lite sodium soy sauce, Moscato wine and Remy Martin cognac...

Romancing The Chocolate: Prize Winner: Peppermint-Hot Chocolate Cake, Fudge Filling, Marshmallow Frosting

Photo provided by Southern LivingBritainy Shaw's Peppermint-Hot Cocoa Cake, right, is a runner-up in Southern Living's annual white cake contest. The Southern Living staff dressed Shaw's cake up by wrapping it in cookies. At left is the second-place cake.

Romancing The Chocolate: Prize Winner: Peppermint-Hot Chocolate Cake, Fudge Filling, Marshmallow Frosting: From Denny:  Love hot chocolate?  Thought of making it into a cake?  Britainy Shaw, 25, of Louisiana (before that she lived in Texas and before that in Montana) decided it was a brilliant idea.  She heard of Southern Living magazine's contest and decided to enter just for fun, taking third for this cake recipe.

She said her thoughts immediately went to her favorite Christmas flavors.  “For some reason, all I could think of were drinks.  I love hot chocolate with peppermint schnapps in it.”

Her cake consists of three layers of buttermilk chocolate cake that is filled with a fudge-mint filling, frosted with peppermint-tinged marshmallow crème frosting.

Romancing The Chocolate: Holiday Cookie: Double-Shot Mocha

Romancing The Chocolate: Holiday Cookie: Double-Shot Mocha: From Denny:  OK, never write a cookie post right before lunch.  It all looks so good you want to rush into the kitchen and start baking! :)  This cookie recipe is basically a dense brownie with pools of melting chocolate oozing out when you break them open straight out of the hot oven!

There are two cups of chocolate chips and chocolate chunks in this awesome recipe, certainly more than I'm used to baking.  It's no wonder you can get your chocolate fix in one small cookie all at once.

If you have the discipline to wait until the cookie cools all those chocolate pools solidify into huge nuggets of gooey goodness.  No one ever said these little chocolate gems would last long in your house - or mine!

It's also a kid friendly recipe it's so easy to do.  You cook the fudge on High in the slow cooker for about 20 minutes total and then pour it out into a pan lined with waxed paper.  Place in fridge to cool and harden.

Week in the field—July 13th, 2012

Dennys: News Politics Comedy Science Arts & Food: 227 Posts Roundup at Dennys Blogs 1 August 2012: From Denny:  With about 100 days until the 2012 election for a new President or a second term for President Obama, there is a lot stirring around in the news.  Both the Romney and Obama campaigns are working hard to influence opinion polls and the news coverage.

Somewhere along the way the truth has been buried.  Yet scandal after scandal emerges from the Obama administration while Romney stumbles with international gaffes.  All this explains why the polls reveal two-thirds of America thinks we are on the wrong track.

Dennys Food and Recipes: Awesome Holiday Dessert: Baked Pear Parcels With Lemon Chamomile Sauce

Tom Teng's Asian pears
Tom Teng's Asian pears (Photo credit: ulterior epicure)

Dennys Food and Recipes: Awesome Holiday Dessert: Baked Pear Parcels With Lemon Chamomile Sauce: From Denny: Pears come in season during the Christmas holidays and are plentiful. But have you thought about what to do with them beyond enjoying them fresh or giving as holiday gifts?

Our local newspaper here in Louisiana included some recipes from USA Pears, so, of course, you know I just had to go explore their site. The site is set up to promote the pear growers' product and awareness of the fruit. Since I've been thinking about setting up my own organic orchards I've been visiting a lot of sites like this one.

While their recipe section is not extensive it has some gems like the following recipe well suited for the holiday table when you want something special to wow the family or your guests. If, you are like me, you like to try new recipes or variations on a popular theme - like baked pears. A nice touch is the lemon chamomile sauce that snuggles up to these pears.
